Recipe for Beet Salad with Honey Mustard Dressing
Ingredients
- Mixed Greens
- Honey Mustard Dressing
- Walnuts
- Blue Cheese Crumble
- Beets
- Salt
- Pepper
- Parsley
- Crispy Onions for Garnish
- Edible Orchid (optional)
Directions
- Poach beets and slice.
- Lightly coat the beets in honey mustard. Sprinkle some salt, pepper and parsley. Let marinate.
- In a mixing bowl, add the mixed greens, walnuts, blue cheese crumbles and season with salt, pepper and parsley. Then add honey mustard.
- Take tongs and evenly coat and mix the salad mixture.
- Place 5 or 6 beets in a single layer on a plate. Stack mixed greens on top of the beets.
- Garnish salad with crispy onions.
- Top with an edible orchid and serve.
How to Make Crispy Onions
Preheat deep fryer or heat cooking oil in a deep saucepan or pot to 375 degrees F. Place sliced onions in small batches in a bowl and add seasoned flour (salt, pepper and flour). Toss onions in seasoned flour while breaking apart. Shake dredged onions well to remove excess flour and carefully add to hot oil. Fry until golden brown and crispy. Transfer to a large plate lined with paper towels. Season with salt and repeat until all onions are fried.
